Frozen Cooked Arctic Sweet Shrimp

Arctic sweet shrimp, cooked and peeled back to the tail fan, each one carrying a band of blue-green roe along the body. The meat is a soft pink with a faint translucency at the tail.

These are the shrimp sold as amaebi — noticeably sweeter and softer than warm-water prawns, which is why they are eaten cold as often as they are cooked. The roe is rich and faintly creamy.

• Cooked, peeled, tail fan left on
• Blue-green roe along the body
• Sweet, soft flesh — sweeter than prawn
• Serve cold, or warm briefly in butter

Keep frozen at -18°C or below.
