Golden Pan Fried Yellow Croaker Fish

Whole yellow croaker, small and golden, shown pan-fried until the skin has crisped and taken on a deep amber colour down to the tail — head and tail on, five to a plate.

Yellow croaker is a delicate white fish with fine, sweet flesh and a single central bone, which makes it easy to eat whole. It is mild enough that a simple fry with salt is all it needs; a squeeze of lemon or a dip of soy and vinegar is plenty.
